The pre-dryer is used to reduce the fresh product humidity when coming out from the pasteurizer; it lowers also the water activity to the desired values for an optimal conservation of the product. The hygrometric conditions of the treatment room are adjusted through a combined system based on air input and sprayed steam injection, controlled automatically by the PLC.
